  • Add boiling water to the bruised leaves, raisins or concentrate, sugar, and the juice and rind of the lemon and orange.
  • When cool, add yeast.
  • Allow to work for seven days,
  • Siphon into a fermenting vessel with an airlock until fermentation is finished.
  • Tender shoots should be used if the aroma is most important.
