Elderflower Hock Home Brew Wine Recipe
This makes a delightful white wine of the hock type, but if it turns out slightly too dry for your liking, add one or, at the most, two drops of sweetener per bottle

- Trim the flowers from the spray with scissors,
- Put them into your polythene bucket with the sugar, concentrate, and lemon rinds (no pith), and pour 3.5 L (six pints) boiling water over them.
- Stir to dissolve the sugar, and leave until cool,
- Add the lemon juice, tannin, nutrients and yeast.
- Leave in a warm place, closely covered, for four days,
- Strain into a fermenting jar, top up to the bottom of the neck with cold water and continue as usual.
- Ready for drinking by Christmas
