- 3/4 of a pint of elderflowers weigh about 3 ounces.
- Gather the flowers on a sunny day when they are fully opened
- Trim them from the stems with scissors until you have 3/4 of a pint (pressed down lightly) of petals.
- Bring the water to a boil and pour over the flowers,
- Add the sugar, chopped raisins or concentrate and lemon juice.
- When it cools to 21°C, add the yeast (a prepared wine yeast is best, but granulated yeast can be used) your grape tanning and yeast nutrient.
- The yeast nutrient is most important in this case.
- Cover well and leave to ferment in a warm place for four or five days.
- Strain into another jar, fit an airlock and leave to ferment.
- When it clears, siphon the wine of the deposit for the first time,
- Two months later, rack it again and bottle it
