- Add the orange juice, sugar and yeast nutrient to 2.36 L (4 pints) of water in a fermentation bucket
- Stir to dissolve.
- Dissolve tanning in a small amount of boiling water and add to the must,
- top up to 4 L (seven pints) with cold water
- add pectic enzyme and yeast.
- Ferment under airlock for one week,
- Top up to 4.5 L (1 gallon) and ferment on to SG 0.995 or below.
- Rack and bottle after a further two weeks.
- This wine is fit to drink immediately but improves with keeping and is at its best served chilled.
- For a medium social wine, add hundred and forty ml ( quarter pint ) grape concentrate, 225g sugar and 3g ( quarter teaspoon ) tartar acid to the above ingredients and proceed as before.
