  • Put the honey into the water and bring to a simmering point.
  • Skim, then pour into a bucket and allow to cool.
  • Add the orange and lemon juice, the yeast, such as an all-purpose wine yeast, and the nutrients.
  • It is essential to add a suitable nutrient, as the honey lacks essential minerals.
  • Pour the mixture into the fermentation vessel and fit it with an airlock, allowing it to ferment completely.
  • This process is likely to take significantly longer than most country wines.
  • Rack the mixture when no further bubbles are rising.
  • Mead should ideally be matured for at least a year,
  • But one must be quite strong-willed to follow this advice!
