- Place the flowers, chopped fruit and sugar in the fermentation book it
- Pour in the wine concentrate and boiling water and stir well
- When cool at the citric acid tanning and yeast nutrient
- Introduce the wine yeast and ferment on the pulp for 10 days, stirring twice daily and keep it closely covered
- Strain into a demi john and ferment, rack, and bottle in due course
