  • Pick the young leaves now, not later, when they have heavy and bitter tanning.
  • Bring 4 to 6 pints of water to a boil, and then dissolve the sugar in it.
  • When it clears, pour the boiling sugar syrup over the leaves.
  • Let it sit overnight,
  • The next day strain into a fermenting jar.
  • Add the citric acid, nutrients, and yeast, then shake well.
  • Top up to the bottom of the neck with cold water, fit an airlock and then ferment in a warm place.
  • Rack when it clears, and again two months later.
