Oak Leaf or Walnut Leaf Wine (Sweet)

- Pick the young leaves now, not later, when they have heavy and bitter tanning.
- Bring 4 to 6 pints of water to a boil, and then dissolve the sugar in it.
- When it clears, pour the boiling sugar syrup over the leaves.
- Let it sit overnight,
- The next day strain into a fermenting jar.
- Add the citric acid, nutrients, and yeast, then shake well.
- Top up to the bottom of the neck with cold water, fit an airlock and then ferment in a warm place.
- Rack when it clears, and again two months later.
