Still Spirits introduce pure distillery yeast strains to make Whisky, Vodka, Rum or Gin.
The choice of yeast strain is of crucial importance in determining what compounds form during fermentation.
The yeast strain will affect the flavour but will be more evident in the character and aroma of the spirit.

The range of Turbo yeasts offered is designed to produce a very neutral, smooth alcohol suitable to be used with Still Spirit essences to make a wide range of liqueurs and spirits.
All four Distillers yeasts have the same advanced nutrition found in other Still Spirits Turbo's, allowing them to ferment up to 15%ABV without the 'stress compounds' which would ruin the alcohol.
Spirit Yeast
The yeasts also contain amyloglucosidase enzyme (AG for short) which will reduce any complex sugars left over from the mash.
Use HT (Heat Tolerant) Alpha-Amylase for converting starch to sugar during the boil.
- The Whisky – contains a specific whisky yeast strain as used in Scottish distilleries.
- The Vodka – contains a natural vodka yeast as used around the world in Vodka distilleries.
- The Rum – contains a pure rum yeast strain widely used in the Caribbean.
- HT Alpha-Amylase – is a heat-tolerant enzyme which reduces complex starches during the boil.
There are three ways to use Pure Distilling Yeasts:
- Use Pure Sugar – use 7kg dextrose/brewing sugar; this will achieve a different flavour and aroma profile with a more specific to type using this yeast.
- Use 2kg Extracts - replace 1.5kg of the sugar with 2kg of the relevant extract wheat for Vodka, malt for Whisky or molasses for Rum this will transform your spirit quality. Wherever possible, this is the desired route securing all the benefits to spirit character and aroma potential.
- Use starch raw materials - for the dedicated enthusiast, go back to the original starch source for the doyen in quality and open up a new world of experimenting by creating your spirit style.

Which sugar should I use?
All recipes contain an element of pure sugar - the preferred sugar to us is dextrose (brewing or corn sugar). Ordinary white household sugar (sucrose) can be used, however, will lead to increased acetaldehyde levels which will carry across distillation to confer a 'sour fruity' aroma to spirits.
