Still Spirits introduce pure distillery yeast strains to make Whisky, Vodka, Rum, or now, Gin.

The choice of yeast strain for rum making is of crucial importance in determining what compounds are formed during fermentation.

The yeast for rum making will affect the flavour but will be more effective in thecharacter and aroma of the spirit.

The range of Turbo yeasts offered are designed to produce a very neutral, smooth alcohol which is suitable to be used with different essences to make a wide range of liqueurs and spirits.

All four Distillers yeasts contain the same superb nutrition found in our other Still Spirits Turbo's, which allows them to ferment to 15%ABV and without the 'stress compounds' that would devestate the alcohol.

The Still Spirits distillers rum yeast also contain amyloglucosidase enzyme (AG for short) that will reduce any complex sugars left over from the mash.

Use HT (Heat Tolerant) Alpha-Amylase for converting starch into sugar during the boil.

The Three ways in which to use Pure Distilling Yeasts:

  1. With Pure Sugar – use 7kg dextrose/brew sugar, this will result in a different flavour and aroma profile which is more specific to type using this yeast.
  2. With 2kg Extracts - replace 1.5kg of the brewing sugar with 2kg of the relevant extract ( wheat for vodka, malt for whisky, or molasses for Rum) this will transform the spirit quality. Wherever possible, this is the optimum route securing all the benefits to spirit character and aroma potential.
  3. With starch raw materials - for the serious enthusiast, go back to the original starch source for the ultimate in quality and open up a new world of experimenting with creating your spirit style. To use this route, you will also need to purchase the 4g HT Alpha-Amylase sachet.
