Some scented Indian and Chinese teas make for lovely wines.

  • Pour boiling water over the tea and sugar, stir thoroughly, and infuse until cool.
  • Strain into the fermenting jar,
  • Add citric acid, yeast nutrient and wine yeast, and top up to the bottom of the neck with cold water.
  • Fit an airlock,
  • Allow to ferment fully, and rack and bottle as usual when stable.
  • This results in a clear, dry wine that is excellent for blending.
