Some scented Indian and Chinese teas make for lovely wines.
- Pour boiling water over the tea and sugar, stir thoroughly, and infuse until cool.
- Strain into the fermenting jar,
- Add citric acid, yeast nutrient and wine yeast, and top up to the bottom of the neck with cold water.
- Fit an airlock,
- Allow to ferment fully, and rack and bottle as usual when stable.
- This results in a clear, dry wine that is excellent for blending.
